Giant Steps Yarra Valley Chardonnay draws from meticulously maintained estate vineyards in the Yarra Valley, including Sexton, Tarraford, Applejack, Primavera and Wombat Creek.
The fruit is all handpicked and chilled overnight, then lightly whole bunch pressed into French oak puncheons, a small proportion new.
The juice wild yeast ferments on full solids. In some years a portion also undergoes spontaneous malolactic fermentation. The wine remains in barrel until the spring, when it is racked, chilled and bottled with minimal fining and filtration.
Pale yellow, Giant Steps Yarra Valley Chardonnay has vibrant fruit flavours, bright acidity and delicate complexity. Cellaring potential is five years.
